Cooking or Baking...What's your thing?

It seems rare to find a woman who really enjoys both cooking and baking. Most of us who enjoy preparing food like one or the other but not both. 

I must admit, I'm in the cooking camp. Finding excellent combinations of flavors using pasta, vegetables, potatoes, fruits, all sorts of meat, dairy, spices...this is what I enjoy (and my waist line shows it.). Baking doesn't bring me anywhere near the same amount of enjoyment as does cooking. 

One of my friends who loves to bake often shows off her successes. She makes all kinds of breads, pastries, cakes, and cookies. Seeing what she bakes tempts me to try my hand at it.

If my waist line can stand a developing interest in baking, I hope to experiment with some new recipes during the Christmas season. So far, these two have made the list.

 Caramel Bars

    Caramel Bars

    TIME: Prep: 20 min. Cook: 12 min.
    Ingredients:
    • 32 individually wrapped caramels, unwrapped
    • 5 tablespoons heavy cream
    • 1 cup all-purpose flour
    • 1 cup rolled oats
    • 3/4 cup brown sugar
    • 1/2 teaspoon baking soda
    • 1/4 teaspoon salt
    • 3/4 cup butter, melted
    • 1/2 cup semisweet chocolate chips
    • 1/2 cup chopped walnuts

    Directions:
    Preheat oven to 350 degrees F (175 degrees C). In a medium saucepan over low heat, melt together the caramels and heavy cream, stirring occasionally until smooth.

    In a medium bowl, stir together the flour, oats, brown sugar, baking soda and salt. Stir in the melted butter until well blended. Press half of the mixture into the bottom of a 9x13 inch baking pan. Reserve the rest.

    Bake the crust for 8 minutes in the preheated oven. Remove and sprinkle with chocolate chips and walnuts. Pour the caramel mixture over the top and then crumble the remaining crust mixture over everything.

    Return to the oven and bake for an additional 12 minutes, or until the top is lightly toasted. Cut into squares while it is still warm. Yield: 9x13 pan.

    If you don't like walnuts, I'm sure pecans would taste good in this too.

  3. Another thing, my bars weren't very thick. The picture above makes them look more "deep dish." When I made them, they were more "thin crust." If you want them to be thicker like brownies, you may want to use a smaller pan.
