Homemade

When we were growing up, my Mom used to make lasagna on occasion. The dish was a particular favorite of my sister Tracey's. She'd request it every now and then, so Mom would go about making it for her and all of us. 

Tracey was out of the house relatively early. She moved out for a semester in college and married shortly thereafter. As she wasn't there to request it anymore, it seemed Mom stopped making the dish. 

One day I asked why she hadn't made it in so long. She admitted that not only is it time consuming but also that Stouffer's now has a good tasting lasagna without the fuss. I admit, I like Stouffer's. 

I think for the most part, Mom's lasagna ruined me for other versions. Most people use Ricotta cheese (which I don't like), but my mom always used cottage cheese in hers. Yum.

When I saw some lasagna noodles in the pantry, I decided I'd try making lasagna myself. Now I understand mom's reluctance to make it very often. It is a longer process than I imagined, but boy was it good. :)


It certainly brought back good memories. 

Thanks Mom for going to the trouble to do all the things you did, big and small, necessary and special things. You're so good to us, both then and now. I love you!
